Treat Yourself - Courgette, Egg and Potatoe Croquettes (Recipe) 


With the days getting shorter a lot of us will be spending more of our evenings at home and that can only mean one thing - cooking!




This Courgette, Egg and Potatoe Croquettes recipe is delicious, easy to make and great for when you're relaxing and watching T.V in the evening. 

Ingredients can be changed and different vegetables can be used however this version gives you a nice texture and the ingredients all compliment each other - yum! 

Ingredients - What You Need 


4 Eggs 

3 Courgettes (Grated)

1 Large Onion (Red Preferably) 

250gr Good Quality Feta Cheese

1 Large Potatoe (Grated)

Self-Raising Flour

Pinch of Paprika

Pinch of Corriander Powder (Optional) 

Salt & Pepper 

Good Quality Oil

Method - How To Make 


Step 1

Grate the courgettes into a bowl and add the salt. Squeeze out any excess liquid and place into another, clean bowl. 

Grate the potatoes and place them into the bowl with the courgettes. 

Finely chop the onion (can use half onion) and add to the bowl with the courgettes and potatoe.

Beat the eggs like you're making an omelette - you can add a touch of salt and pepper to this and a splash of milk too (optional). 
Add this to the bowl with courgettes, potatoes and onion. 

Mix together. 

Step 2

Add as much seasoning as you like to the mix and slowly start to add a tablespoon of flour - a little at a time until the mixture thickens. 

Once it thickens, place it in the fridge for 30-45 minutes. 

Step 3 

Shape the courgettes into circles - like a burger / as pictured above. 

Add 2-3 teaspoons of oil into a pan and when hot place the croquettes in.
 Cook until nicely brown on both sides. 

Once cooked, removed from pan and place them onto a plate with a paper towel - this will absorb any excess oil. 

Serve warm with a salad on the side and yoghurt dip.
